eggplant anyone?

A large group of people at work decided to join the same

farmer's co op. (I opted out on this round,
but I'm planning on signing up next time)

Each week numerous bountiful cardboard boxes

come rolling in to the offices of those insightful enough to 

have joined. This week though my boss is on vacation

and she asked me if I wanted to take home her box...

I am so excited...now I just have to find a good
eggplant recipe....
